  • 3 medium Carrots Peeled and shredded
  • 2 cloves Garlic Minced
  • 1/4 cup Fresh Parsley or Cilantro Chopped
For the Dressing
  • 3 tablespoons Vinegar (Rice or Apple Cider) Can substitute with lemon juice
  • 1 tablespoon Sugar Can substitute with honey or agave syrup
  • 2 tablespoons Sesame Oil Can substitute with olive oil
  • to taste Salt & Pepper

Method
 

Instructions
  1. Begin by peeling the carrots and then shred them using a grater or food processor until finely shredded. Set aside.
  2. In a separate bowl, whisk together minced garlic, vinegar, sugar, sesame oil, salt, and pepper until well combined.
  3. Pour the dressing over the shredded carrots and gently toss until evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the salad a good toss and garnish with fresh parsley or cilantro.
