Instructions
  1. In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice, and lemon zest. Add minced garlic cloves, dried oregano, salt, and black pepper. Blend until smooth and creamy.
  2. Coat chicken tenders thoroughly in the marinade. Cover with plastic wrap or transfer to a resealable bag and refrigerate for at least 30 minutes, up to 2 hours.
  3. Preheat your grill pan over medium heat for 5 minutes, or set your oven to 400°F (200°C).
  4. Remove chicken tenders from marinade, allowing excess to drip off. For grilling, cook for 5-7 minutes on each side until golden and internal temperature reaches 165°F. For baking, roast on a parchment-lined tray for 20-25 minutes until fully cooked.
  5. Transfer cooked chicken tenders to a plate and let rest for 5 minutes. Garnish with freshly chopped parsley or dill if desired.
