- In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice, and lemon zest. Add minced garlic cloves, dried oregano, salt, and black pepper. Blend until smooth and creamy.
- Coat chicken tenders thoroughly in the marinade. Cover with plastic wrap or transfer to a resealable bag and refrigerate for at least 30 minutes, up to 2 hours.
- Preheat your grill pan over medium heat for 5 minutes, or set your oven to 400°F (200°C).
- Remove chicken tenders from marinade, allowing excess to drip off. For grilling, cook for 5-7 minutes on each side until golden and internal temperature reaches 165°F. For baking, roast on a parchment-lined tray for 20-25 minutes until fully cooked.
- Transfer cooked chicken tenders to a plate and let rest for 5 minutes. Garnish with freshly chopped parsley or dill if desired.
