Preheat your grill to medium-high heat.
In a small bowl, mix together the salt, black pepper, olive oil, and Italian seasoning. Rub this mixture all over the chicken breasts.
Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes.
While the chicken is resting, combine the cherry tomatoes, mozzarella, and basil in a bowl. Drizzle with balsamic glaze and toss gently to combine.
Slice the grilled chicken and serve topped with the Caprese mixture. Drizzle any remaining balsamic glaze over the top.
