Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Bake sweet potatoes for 50-60 minutes or microwave for 5-10 minutes until soft.
  3. Prepare quinoa according to package instructions, usually boiling until fluffy, about 15 minutes.
  4. Mash cooked sweet potato and mix in quinoa, parsley, onion powder, salt, and pepper until combined.
  5. Form the mixture into 12 mini patties, ensuring they hold together tightly.
  6. Place the patties on the baking sheet, brush with half of the olive oil, and bake for 10 minutes.
  7. Flip the patties carefully, brush with remaining olive oil, and bake for another 10 minutes.
  8. Cool on the baking sheet for 10-15 minutes before serving.
