- In another bowl, whisk sugar and eggs until frothy, then add milk, oil, coffee, and vanilla.
- Combine wet ingredients into dry ingredients until just mixed.
- Fold chocolate chips into the batter evenly.
- Fill muffin liners about 3/4 full with batter.
- Sprinkle with toppings before baking.
- Bake for 18–22 minutes, check doneness with a toothpick.
- Let cool in the pan for about 5 minutes before transferring to a wire rack.
