  • 1/2 ts Salt
  • 1 cup Granulated Sugar Brown sugar adds deeper flavor
  • 2 large Eggs Flax eggs for vegan option
  • 1 cup Milk (Whole or Buttermilk) Plant-based milk for dairy-free
  • 1/2 cup Vegetable Oil or Melted Butter Coconut oil for unique flavor
  • 1 cup Brewed Coffee Brewed espresso for stronger flavor
  • 1 ts Vanilla Extract
  • 1 cup Chocolate Chips Dark chocolate for richer flavor
Optional Toppings
  • 1/4 cup Toffee Bits
  • 2 tbsp Coarse Sugar
  • 1/4 cup Mini Chocolate Chips

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, espresso powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk sugar and eggs until frothy, then add milk, oil, coffee, and vanilla.
  4. Combine wet ingredients into dry ingredients until just mixed.
  5. Fold chocolate chips into the batter evenly.
  6. Fill muffin liners about 3/4 full with batter.
  7. Sprinkle with toppings before baking.
  8. Bake for 18–22 minutes, check doneness with a toothpick.
  9. Let cool in the pan for about 5 minutes before transferring to a wire rack.
