Step‑by‑Step Instructions
  1. Preheat oven to 375°F (190°C) and grease an 8-inch square baking dish.
  2. Cook sweet potatoes until fork-tender, about 15-20 minutes if boiling or steaming. Mash the sweet potatoes until smooth and set aside.
  3. In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt until well-blended.
  4. In another bowl, whisk together mashed sweet potatoes, buttermilk, melted butter, eggs, and honey until smooth.
  5. Gently fold the wet mixture into the dry mixture until just combined.
  6. Pour batter into prepared baking dish and bake for 25-30 minutes, until golden brown.
  7. While baking, mix softened butter and honey in a small bowl until smooth to make honey butter.
