- Preheat your oven to 400°F (200°C) with the rack in the center.
- In a small bowl, whisk together honey, Dijon mustard, olive oil, soy sauce, garlic powder, paprika, and black pepper. Reserve half for later.
- Line a baking sheet with parchment paper and place chicken breasts in the center, spaced apart. Drizzle half of the sauce over the chicken.
- Wash and cube the potatoes, then toss them with olive oil, salt, and pepper. Spread around the chicken on the sheet pan.
- Roast in the oven for 25 minutes until chicken starts to brown and potatoes soften.
- Add corn kernels around the chicken and drizzle remaining sauce over them. Return to oven.
- Bake for another 15 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
- Let it sit for a few minutes before serving, then enjoy!
