Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) with the rack in the center.
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, soy sauce, garlic powder, paprika, and black pepper. Reserve half for later.
  3. Line a baking sheet with parchment paper and place chicken breasts in the center, spaced apart. Drizzle half of the sauce over the chicken.
  4. Wash and cube the potatoes, then toss them with olive oil, salt, and pepper. Spread around the chicken on the sheet pan.
  5. Roast in the oven for 25 minutes until chicken starts to brown and potatoes soften.
  6. Add corn kernels around the chicken and drizzle remaining sauce over them. Return to oven.
  7. Bake for another 15 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are tender.
  8. Let it sit for a few minutes before serving, then enjoy!
