In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and black pepper. Cook until the chicken is browned on all sides, about 5-7 minutes.
Stir in the uncooked rice, chicken broth, honey BBQ sauce, frozen mixed vegetables, garlic powder, and onion powder. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the skillet, and simmer for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
Remove the skillet from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and garnish with sliced green onions before serving.
