Baking Steps
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth, then mix in the melted butter.
- Add the sugar, beaten egg, and vanilla extract, and stir until blended.
- Sprinkle the baking soda and salt over the mixture, then add the all-purpose flour. Fold gently until just combined.
- In a small bowl, mix cinnamon and sugar for the swirl.
- Pour half of the batter into the prepared loaf pan.
- Sprinkle three-quarters of the cinnamon-sugar mixture over the batter.
- Top with the remaining batter, covering the swirl mixture.
- Gently swirl through the layers with a knife to create a marbled effect.
- Sprinkle the remaining cinnamon-sugar mixture on top before baking.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
