For the Skillet
  • 1 lb Ground Beef can substitute with ground turkey, chicken, or lentils
  • 1 medium Onion yellow or white preferred
  • 1 medium Bell Pepper any color or zucchini as a substitute
  • 2 cloves Garlic minced, fresh preferred
  • 1 cup Corn Kernels fresh or frozen
  • 1 can Canned Black Beans rinse before use
  • 1 can Diced Tomatoes canned or fresh
  • 1 cup Shredded Cheddar Cheese can substitute with Monterey Jack
  • 2 tbsp Taco Seasoning homemade or store-bought
  • 0.5 cup Beef Broth/Water or use vegetable broth
  • 1 tbsp Olive Oil for sautéing
  • to taste Salt and Pepper essential seasonings
Optional Toppings
  • 0.5 cup Sour Cream
  • to taste Sliced Jalapeños
  • 0.25 cup Cilantro chopped
  • 2 pcs Lime Wedges

Method
 

Step-by-Step Instructions
  1. Heat a splash of olive oil in a large skillet over medium-high heat for about 2-3 minutes.
  2. Add diced onion and bell pepper, sauté for 3-4 minutes until the onion is translucent.
  3. Stir in minced garlic, cooking for an additional 1 minute until fragrant.
  4. Introduce ground beef, breaking it apart as it cooks for 5-7 minutes.
  5. Sprinkle taco seasoning over the beef and mix well, cooking for another 1-2 minutes.
  6. Add corn, black beans, diced tomatoes, and beef broth. Stir and let it simmer for 5-7 minutes.
  7. Sprinkle shredded cheddar cheese on top and cover to melt for 2-3 minutes.
  8. Remove from heat and garnish with optional toppings. Serve hot from the skillet.
