Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 ounces diced tomatoes, undrained
  • 1 can 8 ounces tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces uncooked egg noodles
  • 1 cup shredded cheddar cheese
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes. Drain any excess fat.
  3. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Simmer for about 10 minutes, allowing the flavors to meld.
  4. Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  5. In a large mixing bowl, combine the cooked noodles, beef mixture, cheddar cheese, cottage cheese, and half of the Parmesan cheese. Mix until well combined.
  6. Transfer the mixture to a greased 9x13 inch baking dish. Sprinkle the remaining Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
