- Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, and a sprinkle of salt and cinnamon if desired. Stir until well mixed.
- Melt together the natural peanut butter and honey (or maple syrup) in a small saucepan over low heat until smooth, stirring for 2-3 minutes. Remove from heat and stir in vanilla extract.
- Pour the melted mixture over the dry ingredients, mixing thoroughly until evenly coated.
- Using a cookie scoop or your hands, shape the cookie dough into rounds on the baking sheet, pressing gently.
- Bake for 12–15 minutes, or until the cookies are golden and firm. Allow to cool completely on a wire rack.
