Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, and a sprinkle of salt and cinnamon if desired. Stir until well mixed.
  3. Melt together the natural peanut butter and honey (or maple syrup) in a small saucepan over low heat until smooth, stirring for 2-3 minutes. Remove from heat and stir in vanilla extract.
  4. Pour the melted mixture over the dry ingredients, mixing thoroughly until evenly coated.
  5. Using a cookie scoop or your hands, shape the cookie dough into rounds on the baking sheet, pressing gently.
  6. Bake for 12–15 minutes, or until the cookies are golden and firm. Allow to cool completely on a wire rack.
