Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 pound ground turkey
  • 2 medium sweet potatoes peeled and diced (about 3 cups)
  • 1 bell pepper diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheddar cheese optional
  • Fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Mix in the diced sweet potatoes and bell pepper, followed by the paprika, cumin, salt, and pepper. Stir well to combine.
  6. Pour in the chicken broth, cover the skillet, and let it simmer for about 10 minutes, or until the sweet potatoes are tender.
  7. Transfer the mixture to a greased 9x13-inch baking dish. If using, sprinkle the shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
