  • 1 Onion shallots or leeks can be used
  • 2 cloves Garlic fresh is best, powdered can work in a pinch
  • 1 medium Red Bell Pepper green bell pepper can be used as an alternative
  • 1 tbsp Smoked Paprika chili powder can be used as a substitute
  • 1 tsp Ground Cumin can be omitted if not a fan
  • 1 tsp Dried Thyme Italian seasoning can be a great alternative
  • Salt adjust to taste
  • Pepper adjust to taste
  • 1 cup Shredded Cheese (Mozzarella or Cheddar) for a dairy-free option, try nutritional yeast
For Garnish
  • Parsley or Cilantro optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil and sauté diced onion for 3-4 minutes until soft.
  3. Add ground turkey and cook for 5-6 minutes until browned and no longer pink.
  4. Stir in minced garlic, diced red bell pepper, cubed sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for 3-5 minutes until fragrant.
  5. Transfer the mixture to the baking dish and cover tightly with aluminum foil. Bake for 25 minutes.
  6. Remove foil, sprinkle shredded cheese on top, and bake uncovered for an additional 10-15 minutes until cheese is bubbly and golden brown.
  7. Let it sit for a few minutes before garnishing with parsley or cilantro and serving warm.
