Preparation
  1. Soak wooden skewers in water for at least 15 minutes.
  2. In a mixing bowl, combine shrimp, rosemary, crushed red pepper flakes, garlic, 1 Tbsp olive oil, lemon zest, and salt. Let marinate for 15-30 minutes.
  3. Heat remaining olive oil in a saucepan over medium heat. Sauté shallots for 2-3 minutes. Add capers, wine, and broth; simmer for 5-7 minutes, then stir in butter and parsley.
  4. Thread shrimp onto soaked skewers, leaving space between them for even cooking.
  5. Preheat grill to medium-high heat (400°F/200°C). Grill skewers for 2-3 minutes per side until shrimp are opaque.
  6. Remove skewers from grill, drizzle with piccata sauce, and garnish with lemon zest and Parmesan.
