Preheat your grill to medium-high heat.
In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, black pepper, and salt until well combined.
Place the salmon fillets in a shallow dish and pour the marinade over them. Let the salmon marinate for at least 15 minutes, or up to 1 hour in the refrigerator for more flavor.
Lightly oil the grill grates to prevent sticking. Place the marinated salmon fillets skin-side down on the grill.
Grill the salmon for about 6-8 minutes per side, or until it flakes easily with a fork and reaches an internal temperature of 145°F.
Remove the salmon from the grill and let it rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
