  • 1 cup Breadcrumbs Add extra if mixture is too loose.
  • 1/4 cup Fresh Parsley Can be replaced with fresh cilantro.
  • 1/4 cup Grated Parmesan Cheese Substitute with nutritional yeast for a dairy-free option.
  • 1 teaspoon Garlic Powder Fresh minced garlic can also be used.
  • 1 teaspoon Dried Oregano Thyme can be a substitute.
  • 1 teaspoon Ground Cumin Replace with ground coriander for different flavor.
  • 1/2 teaspoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper Adjust to taste.
  • 2 tablespoons Olive Oil Alternatively, use avocado oil.
For the Bowl
  • 2 cups Cooked White Rice Quinoa or couscous can be used as alternatives.
  • 1 cup Cherry Tomatoes Can be swapped with diced bell peppers.
  • 1 cup Cucumber Zucchini can also work.
  • 1/2 cup Red Onion Green onions can be used instead.
  • 1/3 cup Kalamata Olives Manzanilla olives can be a substitute.
For the Tzatziki
  • 1 cup Tzatziki Sauce Greek yogurt with lemon and garlic can serve as a substitute.
  • 1 tablespoon Fresh Lemon Juice

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan cheese, garlic powder, oregano, cumin, cinnamon, salt, and pepper. Mix until well combined.
  3. Roll the meat mixture into meatballs about 1 to 1.5 inches in diameter and place them on the baking sheet.
  4. Drizzle the meatballs with olive oil for a crispy exterior.
  5. Bake the meatballs for 15 to 20 minutes, until cooked through and browned.
  6. Cook the white rice according to package instructions.
  7. In another bowl, combine halved cherry tomatoes, diced cucumber, red onion, and Kalamata olives. Toss to mix.
  8. After baking, let the meatballs rest for a few minutes.
  9. Layer cooked rice, fresh veggie mix, and meatballs into bowls.
  10. Drizzle with tzatziki sauce and finish with a squeeze of fresh lemon juice.
