In a small bowl, mix together the teriyaki sauce and honey. Place the salmon fillets in a shallow dish and pour the teriyaki mixture over them. Let marinate for at least 15 minutes.
Heat olive oil in a large skillet over medium heat. Remove the salmon from the marinade (reserve the marinade) and place the fillets in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and set aside.
In the same skillet, add sesame oil and minced garlic. Sauté for about 30 seconds until fragrant.
Add the chopped pak choi to the skillet and stir-fry for 3-4 minutes until wilted. Season with salt and pepper to taste.
Drizzle the reserved teriyaki marinade over the pak choi and toss to combine. Cook for an additional 1-2 minutes.
Serve the salmon on a plate with the sautéed pak choi on the side. Sprinkle sesame seeds and sliced green onions on top for garnish.
