  • 1 teaspoon Dried rosemary Fresh rosemary can be substituted.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Black pepper Use fresh cracked for best flavor.
For the Cooking Liquid
  • 1 cup Beef broth Can substitute with vegetable broth for lighter option.
  • 1 tablespoon Olive oil Can replace with canola or avocado oil.

Method
 

Preparation Steps
  1. Cut the beef stew meat into bite-sized pieces and halve the baby potatoes. Gather spices and butter for easy access.
  2. Optionally parboil the halved potatoes in boiling salted water for 10 minutes until slightly tender. Drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat and sear the beef until browned, about 3-4 minutes per side.
  4. In a bowl, melt the unsalted butter and mix in minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper.
  5. In the slow cooker, layer the parboiled potatoes and seared beef. Drizzle garlic butter sauce and add beef broth.
  6. Set slow cooker to low for 6-8 hours or high for 3-4 hours; cook until beef is fork-tender.
  7. Let the dish rest for 10 minutes after cooking before serving.
