Ingredients

For the Sushi Rolls
  • 2 whole Cucumber Use English cucumbers for less seed content.
  • 4 slices Cheese Use dairy-free cheese for a vegan option.
  • 4 slices All-Natural Deli Meat Options include turkey, chicken, or ham; choose low-sodium varieties.
  • 1 cup Fresh Matchstick Carrots Can substitute with bell peppers for variety.
For Garnish
  • 1 tablespoon Sesame Seeds Optional; omit if nut allergies are a concern.

Equipment

  • Sharp knife
  • Melon Baller
  • Cutting board
  • Serving Platter

Method

Step-by-Step Instructions
  1. Start by rinsing the cucumber thoroughly under cold water. Using a sharp knife, slice the cucumber into thick rounds, about 3/4 to 1 inch wide. Set aside the rounds on a clean cutting board.
  2. Take a melon baller and gently scoop out the center of each cucumber slice, creating a hollow where you'll place the fillings.
  3. Begin by rolling a slice of cheese into a log shape and place it into the hollowed-out cucumber. Then add your choice of all-natural deli meat, followed by matchstick carrots.
  4. If you'd like to add a touch of flair, sprinkle some sesame seeds over the top of each cucumber stuffed with fillings.
  5. Transfer the finished cucumber sushi onto a serving platter. They can be served immediately for a refreshing snack.
