- Start by rinsing the cucumber thoroughly under cold water. Using a sharp knife, slice the cucumber into thick rounds, about 3/4 to 1 inch wide. Set aside the rounds on a clean cutting board.
- Take a melon baller and gently scoop out the center of each cucumber slice, creating a hollow where you'll place the fillings.
- Begin by rolling a slice of cheese into a log shape and place it into the hollowed-out cucumber. Then add your choice of all-natural deli meat, followed by matchstick carrots.
- If you'd like to add a touch of flair, sprinkle some sesame seeds over the top of each cucumber stuffed with fillings.
- Transfer the finished cucumber sushi onto a serving platter. They can be served immediately for a refreshing snack.
