  • 3 tablespoons Olive Oil substitution: Avocado oil can also be used.
  • 1 teaspoon Dried Oregano use Italian seasoning as an alternative.
  • 1/2 teaspoon Red Pepper Flakes omit or reduce for a milder dish.
  • 1 teaspoon Lemon Zest use lemon juice as a substitute for a slightly different flavor.

Step-by-Step Instructions for Mediterranean Chicken Stir Fry
  1. Begin by patting your chicken breast dry using paper towels, and season the chicken pieces with salt, black pepper, and half of the dried oregano.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the chicken, cooking for about 5-6 minutes until golden-brown, then remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil, then minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the diced red bell pepper and yellow squash to the skillet, cooking for about 4-5 minutes until they begin to soften.
  5. Stir in the cherry tomatoes and cook for an additional 2 minutes. Return the chicken to the skillet, along with fresh spinach, remaining oregano, and red pepper flakes. Toss until spinach wilts.
  6. Continue cooking for an additional 2-3 minutes, ensuring everything is heated through before removing from heat.
  7. Finish with fresh lemon zest over the top and adjust seasoning to taste before serving.
