- In a mixing bowl, combine Greek yogurt, honey, cream cheese, and vanilla extract. Blend until smooth and creamy, about 2–3 minutes.
- Line a rectangular baking pan with parchment paper for easy removal. Set it aside.
- Pour the yogurt mixture into the lined pan, smoothing out to about ½ inch thick.
- Sprinkle fresh berries and coconut flakes over the yogurt base, pressing them gently to adhere.
- Place the pan in the freezer for about 1 hour, or until the yogurt bark is solid but not overly hard.
- Remove the yogurt bark from the pan using the parchment paper and slice it into desired pieces.
