Step-by-Step Instructions
  1. Season the chicken with sea salt and pepper. Heat olive oil in a skillet over medium-high heat. Add chicken skin-side down and brown for 5-7 minutes. Flip and cook for another 5-7 minutes until browned.
  2. Transfer chicken to a plate. Add diced onion to the skillet and sauté for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour in white wine, stirring to deglaze the pan. Add diced tomatoes and stir. Allow to simmer for 5-6 minutes until tomatoes soften.
  4. Return browned chicken to the skillet, cover, and let it simmer on low heat for 25 minutes until cooked through (internal temp 165°F).
  5. Add olives, capers, and torn basil to the skillet. Stir gently to combine and simmer for 1 more minute before serving warm.
