Ingredients
  

For the Dough
  • 7 fl. oz Water Temperature between 98-100°F
  • 1/2 tsp Dry Active Yeast
  • 1 tsp Granulated Sugar
  • 11.5 oz All-Purpose Flour Approx. 2 cups
  • 3.5 tsp Extra Virgin Olive Oil Use more for oiling pans
  • 1 tsp Table Salt Add after initial mixing
For the Toppings
  • 1 can Pizza Sauce 15 oz, can be substituted with homemade
  • 2 packages Aged Cheddar Cheese 7 oz each
  • 1 cup Fresh Mozzarella Shredded
  • 1/4 cup Parmesan Cheese Grated, can be omitted
Optional Toppings
  • Pepperoni Add for extra flavor
  • Sausage Add for extra flavor
  • Fresh Bell Peppers Add for extra flavor
  • Mushrooms Add for extra flavor
  • Artichokes Great for a vegetarian twist
  • Spinach Great for a vegetarian twist

Method
 

Prepare the Dough
  1. Combine warm water with yeast and sugar. Let bloom for 5–10 minutes. Add flour, olive oil, and salt. Mix and knead for 5–7 minutes.
Proof the Dough
  1. Transfer dough to a greased bowl, cover, and let proof for 1 hour until doubled in size.
Chill the Dough
  1. Divide dough into two pieces, place in zip-top bags, and chill overnight.
Prepare the Toppings
  1. Shred cheeses and measure Parmesan for topping.
Preheat the Oven
  1. Preheat oven to 450°F and place pizza stone on the bottom rack.
Assemble the Pizza
  1. Grease pans, stretch dough, spread sauce, and add cheeses.
Bake the Pizza
  1. Bake pizzas on pizza stone for 10 minutes, then move to middle rack for an additional 8–10 minutes.
Serve and Enjoy
  1. Let pizzas cool for a couple of minutes, slice into six pieces, and serve hot.
