Preparation Steps
- Begin by peeling and chopping your ripe mangoes into manageable chunks.
- In a blender, combine the mango chunks, coconut milk, lime juice, and honey or agave syrup.
- Taste and adjust sweetness by adding more honey or agave syrup if necessary.
- If desired, stir in chopped mint or coconut flakes before pouring the mixture into molds.
- Pour the mixture into popsicle molds, filling them about ¾ of the way full.
- Place the filled molds in the freezer for at least 4-6 hours or until completely solid.
- Once frozen, run warm water over the molds to help release the popsicles. Serve immediately.
