  • 4 oranges organic oranges Use organic for best flavor
  • 2 cups water For boiling
  • 2 cups sugar Granulated sugar or substitutes for low-carb

For the Chocolate Coating
  • 8 oz dark chocolate High-quality chocolate
  • 1 tbsp coconut oil Makes chocolate smoother

Method
 

Step-by-Step Instructions
  1. Prepare Oranges: Wash oranges, trim tops and bottoms, score peel in quarters, and slice into thin strips.
  2. Boil Peels: Place orange peel strips in pot, cover with water, bring to boil, then drain. Repeat this boiling twice.
  3. Simmer in Syrup: Return peels to pot with fresh water, stir in sugar and optional vanilla. Boil then simmer for 30-35 minutes.
  4. Cool: Remove from heat and let peels rest in syrup for 5 minutes.
  5. Dry Peels: Transfer peels to drying rack and allow to dry for at least 8 hours.
  6. Coat with Chocolate: Melt dark chocolate with coconut oil, dip peels in chocolate, then place back to dry.
  7. Cool and Store: Once chocolate hardens, store in an airtight container.
