- Prepare Oranges: Wash oranges, trim tops and bottoms, score peel in quarters, and slice into thin strips.
- Boil Peels: Place orange peel strips in pot, cover with water, bring to boil, then drain. Repeat this boiling twice.
- Simmer in Syrup: Return peels to pot with fresh water, stir in sugar and optional vanilla. Boil then simmer for 30-35 minutes.
- Cool: Remove from heat and let peels rest in syrup for 5 minutes.
- Dry Peels: Transfer peels to drying rack and allow to dry for at least 8 hours.
- Coat with Chocolate: Melt dark chocolate with coconut oil, dip peels in chocolate, then place back to dry.
- Cool and Store: Once chocolate hardens, store in an airtight container.
