Steps
- Bring a large pot of salted water to a rolling boil over high heat. Add your favorite pasta and cook according to the package directions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta in a colander and return it to the pot, allowing any excess water to evaporate.
- Drizzle in a small amount of olive oil and stir through. Toss in a few ice cubes, stirring gently until they melt to cool the pasta.
- In a food processor, combine the ripe avocado, garlic, fresh herbs, white wine vinegar, and optional nutritional yeast. Pulse until smooth and creamy.
- Once the pasta has cooled, add it back to the pot along with diced spinach and green onions. Pour the dressing over the mixture and toss gently.
- Garnish with sliced green onions and serve chilled.
