Ingredients
  

For the Salad
  • 8 ounces Pasta use your favorite shape or gluten-free pasta
  • 1 medium Avocado choose ripe for creaminess
  • 2 cups Spinach fresh or thawed frozen
  • 1 cup Herbs (Basil and Dill) fresh, can experiment
  • 3 tablespoons Green Onions replace with shallots if desired
For the Dressing
  • 2 cloves Garlic adjust based on preference
  • 2 tablespoons White Wine Vinegar can substitute with apple cider or rice vinegar
  • 1 tablespoon Nutritional Yeast optional, can use vegan parmesan

Method
 

Steps
  1. Bring a large pot of salted water to a rolling boil over high heat. Add your favorite pasta and cook according to the package directions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta in a colander and return it to the pot, allowing any excess water to evaporate.
  2. Drizzle in a small amount of olive oil and stir through. Toss in a few ice cubes, stirring gently until they melt to cool the pasta.
  3. In a food processor, combine the ripe avocado, garlic, fresh herbs, white wine vinegar, and optional nutritional yeast. Pulse until smooth and creamy.
  4. Once the pasta has cooled, add it back to the pot along with diced spinach and green onions. Pour the dressing over the mixture and toss gently.
  5. Garnish with sliced green onions and serve chilled.
