Zucchini Pizza Casserole Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss shredded zucchini with salt and let sit for 10 minutes.
  3. Squeeze out excess liquid from zucchini using a towel.
  4. Mix the drained zucchini, eggs, Parmesan, and half of the mozzarella until combined.
  5. Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
  6. Bake the crust for 20 minutes until set and lightly browned.
  7. While the crust bakes, brown the ground beef and onion in a skillet.
  8. Combine beef with pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper; simmer for 5 minutes.
