Zucchini Pizza Casserole Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss shredded zucchini with salt and let sit for 10 minutes.

- Mix the drained zucchini, eggs, Parmesan, and half of the mozzarella until combined.
- Grease a 9x13-inch baking dish and press the zucchini mixture evenly into the bottom.
- Bake the crust for 20 minutes until set and lightly browned.
- While the crust bakes, brown the ground beef and onion in a skillet.
- Combine beef with pizza sauce, bell pepper, mushrooms, oregano, garlic powder, and black pepper; simmer for 5 minutes.
- Spread the beef mixture evenly over the baked crust.
- Sprinkle remaining mozzarella and cheddar cheese over the beef layer.
- Bake for another 20 minutes until cheese is melted and bubbly.
- Let cool for 10 minutes before slicing and serving.
