Step‑by‑Step Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Gather all your ingredients for a smooth workflow.
- Using a sharp knife, slice each salmon piece lengthwise to create a pocket for the stuffing. Brush each fillet with olive oil and season with salt and pepper.
- In a large skillet, heat the remaining olive oil over medium heat. Add spinach along with Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for about 2 minutes until the spinach is wilted.
- Remove the skillet from heat and stir in chopped roasted red peppers, feta cheese, and grated Parmesan. Mix well until creamy.
- Carefully fill each salmon pocket with the spinach-feta mixture, avoiding overstuffing.
- Transfer the stuffed salmon onto the prepared baking sheet and bake for 12-17 minutes, or until opaque.
- Remove from the oven and let it rest for a couple of minutes. Serve hot with a drizzle of lemon juice.

Notes
Customize the stuffing with your favorite herbs or cheeses. Make sure not to overstuff the salmon to avoid bursting during baking.
