Ingredients

For the Salmon
  • 4 pieces Salmon (6-ounce) The main protein source providing rich omega-3s; fresh salmon ensures the best texture and flavor.
  • 2 Tbsp Olive Oil Perfect for brushing the salmon and sautéing spinach; opt for extra virgin for superior taste.
  • Salt and Pepper Essential seasonings to enhance all flavors; adjust according to taste.
For the Stuffing
  • 3 cups Baby Spinach Adds freshness and nutrients; can be substituted with kale or Swiss chard for a twist.
  • 1 tsp Italian Seasoning Enhances flavor with herbal hints; feel free to adjust to your taste preference.
  • 1/2 tsp Paprika Provides color and a mild flavor; consider using smoked paprika for extra depth.
  • 1 pinch Cayenne Pepper Adds a subtle heat that elevates the flavors; adjust for your personal spiciness preference.
  • 1/4 cup Roasted Red Peppers (chopped) Sweet and smoky element in the stuffing; fresh red bell peppers can be roasted at home.
  • 5.3 oz Feta Cheese Creamy element that enriches the stuffing; use high-quality sheep's or goat's feta for maximum flavor.
  • 1/4 cup Parmesan Cheese (freshly grated) Adds umami; for a dairy-free option, substitute with nutritional yeast.

Method

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Gather all your ingredients for a smooth workflow.
  2. Using a sharp knife, slice each salmon piece lengthwise to create a pocket for the stuffing. Brush each fillet with olive oil and season with salt and pepper.
  3. In a large skillet, heat the remaining olive oil over medium heat. Add spinach along with Italian seasoning, paprika, cayenne, salt, and pepper. Sauté for about 2 minutes until the spinach is wilted.
  4. Remove the skillet from heat and stir in chopped roasted red peppers, feta cheese, and grated Parmesan. Mix well until creamy.
  5. Carefully fill each salmon pocket with the spinach-feta mixture, avoiding overstuffing.
  6. Transfer the stuffed salmon onto the prepared baking sheet and bake for 12-17 minutes, or until opaque.
  7. Remove from the oven and let it rest for a couple of minutes. Serve hot with a drizzle of lemon juice.
