Preparation
  1. In a large salad bowl, combine the fresh baby spinach and chopped radicchio. Add in the juicy raspberries, a sprinkle of raisins, and the toasted pine nuts for added crunch. Thinly slice the red onion and mince the fresh mint before tossing them into the bowl. Gently mix these vibrant ingredients together.
  2. In a small saucepan, over medium heat, combine the lime juice, olive oil, honey, minced chipotle peppers, and a pinch of salt. Whisk continuously for 2-3 minutes until the dressing is well blended and heated through, but not boiling.
  3. Remove the saucepan from heat and carefully pour the warm chipotle dressing over the salad mixture. Toss everything together to ensure even coating.
  4. Just before serving, sprinkle the crumbled feta cheese over the top of the salad and serve immediately.
