- In a small bowl, whisk together the rice vinegar, tamari, sesame oil, ginger, garlic, and maple syrup until smooth. Set aside.
- Bring a large pot of water to a rolling boil. Add the soba noodles and cook according to package instructions, typically for 5 to 7 minutes. Drain and rinse under cold water.
- In a mixing bowl, add the cooled soba noodles. Pour the dressing over the noodles and toss until evenly coated.
- Squeeze fresh lemon juice over the dressed noodles. Add the avocados, snap peas, edamame, and radishes. Toss gently to combine.
- Sprinkle toasted sesame seeds on top for added crunch. Serve immediately or chill in the fridge.
