Instructions
  1. In a small bowl, whisk together the rice vinegar, tamari, sesame oil, ginger, garlic, and maple syrup until smooth. Set aside.
  2. Bring a large pot of water to a rolling boil. Add the soba noodles and cook according to package instructions, typically for 5 to 7 minutes. Drain and rinse under cold water.
  3. In a mixing bowl, add the cooled soba noodles. Pour the dressing over the noodles and toss until evenly coated.
  4. Squeeze fresh lemon juice over the dressed noodles. Add the avocados, snap peas, edamame, and radishes. Toss gently to combine.
