  • 1 medium English Cucumber Bell peppers can serve as a substitute.
  • 1 medium Ripe Mango Swap in avocado or kiwi for variety.
  • 1 medium Avocado Omit or replace with a nut spread.
  • 2 tablespoons Pickled Ginger Fresh ginger can replace it but won’t have the same zest.
  • 1 tablespoon Sesame Seeds Omit or swap with chopped nuts.
  • 1 cup Baked Tofu Tempeh or chickpeas can be alternatives.
  • 1 handful Basil Leaves/Microgreens Cilantro or parsley can work as substitutes.
For the Sauce
  • 1/2 cup Spicy Mayo Mix mayo with sriracha to your preferred heat level.
  • 1 tablespoon Umeboshi Paste Optional if you prefer a simpler flavor.

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine warm, cooked short-grain rice with rice vinegar, cane sugar, and a pinch of salt. Use a wooden spoon to fold the mixture until the rice is evenly coated and glossy.
  2. In a small mixing bowl, whisk together tamari and lime juice until well combined.
  3. In another small bowl, combine mayonnaise and sriracha to create a spicy mayo and adjust the heat level.
  4. Place a nori sheet shiny side down and add a scoop of the seasoned rice, layering your choice of fillings on top.
  5. Start by folding the bottom edge of the nori sheet over the fillings and roll tightly, wetting the edge to seal.
  6. Slice the assembled wraps diagonally and serve with spicy mayo and the dipping sauce.
