Step-by-Step Instructions
  1. Thaw Wrappers: If your lumpia wrappers are frozen, take them out and thaw them on the countertop for about 30 minutes.
  2. Mix Filling: In a large bowl, combine yellow onion, scallions, grated carrot, and minced garlic.
  3. Add Seasonings: Crack an egg into the vegetable mixture, add kosher salt and black pepper, and mix until well combined.
  4. Incorporate Pork: Gradually add the ground pork to the vegetable mixture and mix until integrated.
  5. Wrap Filling: Place about 1.5 tablespoons of the filling onto a wrapper and roll tightly, sealing the edges with egg white.
  6. Prepare for Frying: Line a baking sheet with parchment paper and arrange the wrapped lumpia in a single layer.
  7. Heat Oil: In a skillet, heat canola oil until it reaches 330-350°F.
  8. Fry: Add lumpia to the hot oil in small batches, cooking for 5-7 minutes until golden brown.
