Step-by-Step Instructions for Ground Beef Zucchini Boats
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis in half lengthwise and scoop out the seeds to create space for the filling.
  3. In a skillet over medium heat, add olive oil, diced onions, and minced garlic, and sauté until translucent.
  4. Add the ground beef, breaking it apart and seasoning with salt, pepper, and Italian seasoning. Cook until browned.
  5. Stir in diced bell peppers and tomato sauce, simmer for another 3-4 minutes until peppers soften.
  6. Spoon the beef and vegetable mixture into the hollowed zucchini halves.
