Step‑by‑Step Instructions
  1. In a food processor, combine 1 cup of pitted Medjool dates, 1/2 cup of unsweetened cocoa powder, 1 cup of almonds, 1/2 cup of rolled oats, 2 tablespoons of chia seeds, and 2 tablespoons of melted coconut oil. Pulse until a sticky consistency forms, about 1-2 minutes.
  2. Check the texture. If too dry, add an extra Medjool date or a teaspoon of coconut oil and pulse for about 15 seconds until cohesive.
  3. Wet hands to prevent sticking and scoop out tablespoon-sized portions. Roll into smooth balls about 1 inch in diameter, yielding around 12 energy balls.
  4. Cover and chill the energy balls in the refrigerator for 30 minutes to firm up slightly.
