Method
 

  1. Chop the dark chocolate into small pieces and place it in a heatproof bowl.
  2. Melt the chocolate using a double boiler method: bring a pot of water to a simmer, then place the bowl with chocolate over the pot, ensuring the bottom of the bowl doesn't touch the water. Stir occasionally until fully melted and smooth.
  3. Remove the bowl from the heat and let the chocolate cool slightly, about 5 minutes.
  4. Using a hand mixer or whisk, beat the melted chocolate until it becomes light and fluffy, about 3-5 minutes.
  5. Spoon the mousse into serving dishes and refrigerate for at least 30 minutes to set before serving.
