  1. Begin by breaking the chocolate into small pieces and placing it in a heatproof bowl.
  2. Set the bowl over a pot of simmering water (double boiler method) and stir the chocolate until it is completely melted and smooth. Remove from heat and let it cool slightly.
  3. Once the chocolate has cooled but is still pourable, use a hand mixer or whisk to beat the chocolate until it becomes light and fluffy. This should take about 5-7 minutes.
  4. Spoon the mousse into serving dishes or cups and refrigerate for at least 30 minutes to set.
