Method
- Begin by breaking the chocolate into small pieces and placing it in a heatproof bowl.
- Set the bowl over a pot of simmering water (double boiler method) and stir the chocolate until it is completely melted and smooth. Remove from heat and let it cool slightly.
- Once the chocolate has cooled but is still pourable, use a hand mixer or whisk to beat the chocolate until it becomes light and fluffy. This should take about 5-7 minutes.
- Spoon the mousse into serving dishes or cups and refrigerate for at least 30 minutes to set.
- Serve chilled, optionally garnished with fresh berries or a dollop of whipped cream.
