Ingredients
  

  • 8 ounces high-quality dark chocolate 70% cocoa or higher

Method
 

  1. Chop the dark chocolate into small pieces and place it in a heatproof bowl.
  2. Melt the chocolate using a double boiler method: fill a saucepan with a couple of inches of water and bring it to a simmer. Place the bowl with the chocolate on top, ensuring it doesn’t touch the water. Stir occasionally until completely melted and smooth.
  3. Remove the bowl from the heat and let the chocolate cool slightly, about 5 minutes.
  4. Using a hand mixer or a whisk, beat the melted chocolate until it becomes light and fluffy, about 3-5 minutes. If using a whisk, it may take longer.
  5. Spoon the mousse into serving dishes or cups and refrigerate for at least 30 minutes to set.
  6. Serve chilled and enjoy!
