Preparation Steps
- Slice the pears and soak in sweet sherry for 30 minutes at room temperature.
- Preheat the oven to 225°F (110°C). Whisk egg whites until frothy, add sugar gradually, and whisk until stiff peaks form.
- Spread meringue on a lined baking sheet, shape into a disc, and bake for 1.5 hours.
- Layer Madeira cake in a trifle bowl, add sherry-soaked pears, and drizzle with remaining sherry. Chill for 15-20 minutes.
- Whip double cream with icing sugar until soft peaks form and fold in crumbled meringue.
- Spoon whipped cream over chilled cake and pear layers, top with more crumbled meringue, sprinkle amaretti biscuits and pear slices.
