For the Meringue
  • 4 pieces Egg Whites Use free-range for best results
  • 250 grams Caster Sugar Regular sugar can be used
  • 50 grams Flaked Almonds Toast for enhanced flavor

Method
 

Preparation Steps
  1. Slice the pears and soak in sweet sherry for 30 minutes at room temperature.
  2. Preheat the oven to 225°F (110°C). Whisk egg whites until frothy, add sugar gradually, and whisk until stiff peaks form.
  3. Spread meringue on a lined baking sheet, shape into a disc, and bake for 1.5 hours.
  4. Layer Madeira cake in a trifle bowl, add sherry-soaked pears, and drizzle with remaining sherry. Chill for 15-20 minutes.
  5. Whip double cream with icing sugar until soft peaks form and fold in crumbled meringue.
  6. Spoon whipped cream over chilled cake and pear layers, top with more crumbled meringue, sprinkle amaretti biscuits and pear slices.
