  • 3/4 cup Unsweetened Cocoa Powder high-quality recommended
  • 1 cup Dark Brown Sugar or light brown sugar
  • 1 cup Granulated Sugar can be reduced if desired
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Vegetable Oil or melted butter
  • 2 large Eggs at room temperature
  • 1 cup Hot Coffee brewed or strong instant
For the Frosting
  • 1 cup Heavy Cream
  • 4 ounces Semi-Sweet Chocolate high-quality
  • 4 ounces Dark Chocolate high-quality

Method
 

Frosting Preparation
  1. In a mixing bowl, combine semi-sweet chocolate and dark chocolate. Add heavy cream and mix until smooth, then heat gently until melted.
  2. Set aside to cool and thicken.
Cake Preparation
  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a large bowl.
  3. In a separate bowl, mix sugars, vegetable oil, eggs, and hot coffee. Combine wet and dry ingredients, folding until smooth.
  4. Divide batter between pans and bake for 25-30 minutes.
  5. Cool in pans for 10 minutes, then transfer to a wire rack.
Assembling the Cake
  1. Once cakes have cooled, level tops if necessary, and slice each cake into two layers.
  2. Brush each layer with cooled coffee soak.
  3. Layer cake with frosting between each layer, topping with frosting on the final layer.
  4. Apply a crumb coat, refrigerate for 30 minutes, then apply a thicker layer of frosting.
