Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound total)
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice about 2 limes
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh cilantro for garnish
  • Lime wedges for serving

Method
 

  1. In a medium bowl, whisk together the olive oil, lime juice, minced garlic, cumin, oregano, salt, black pepper, and red pepper flakes (if using) to create a marinade.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely browned.
  5. Remove the chicken from the grill and let it rest for 5 minutes before slicing.
  6. Serve the grilled chicken garnished with fresh cilantro and lime wedges.
