Spread butter evenly on one side of each slice of bread. If using, sprinkle garlic powder and dried parsley on the buttered side for added flavor.
Place the shredded cheddar cheese on the unbuttered side of one slice of bread, then top with the other slice, buttered side up.
Using a rolling pin, gently flatten the sandwich to help it hold together.
Heat a skillet over medium heat. If desired, lightly coat the skillet with cooking spray.
Carefully place the sandwich in the skillet and cook for about 3-4 minutes, or until golden brown. Flip the sandwich and cook for an additional 3-4 minutes until the other side is golden and the cheese is melted.
Remove from the skillet and let cool for a minute before slicing into roll-ups.
