In a large bowl, combine the shredded chicken, mozzarella cheese, cream cheese, mayonnaise, minced garlic, onion powder, paprika, salt, and black pepper. Mix until well combined.
Heat a large skillet over medium heat and lightly grease it with cooking spray or oil.
Place one tortilla in the skillet and spoon about 1/4 cup of the chicken mixture onto one half of the tortilla.
Fold the tortilla over to cover the filling and press down gently. Cook for 3-4 minutes on each side, or until golden brown and crispy.
Remove from the skillet and repeat with the remaining tortillas and filling.
Once all tortillas are cooked, slice them in half and garnish with fresh parsley before serving.
