Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large cucumber sliced into thin strips
  • 1 head of butter or romaine lettuce leaves separated
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon water more if needed
  • Chopped peanuts and cilantro for garnish optional

Method
 

  1. In a bowl, season the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove from heat and set aside.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and water until smooth. Adjust the consistency by adding more water if needed.
  4. To assemble the wraps, take a lettuce leaf and place a few strips of cucumber and a spoonful of the crispy chicken in the center. Drizzle with creamy peanut sauce.
  5. Garnish with chopped peanuts and cilantro if desired. Roll the lettuce leaf around the filling and enjoy!
