For the Bombs
  • 3-4 medium starchy potatoes Like Russets for fluffy texture
  • 1 cup mozzarella cheese Or your favorite melting cheese
  • 1 cup neutral oil Like canola oil for frying
  • 1 cup Panko breadcrumbs For a light and crispy exterior
For the Chutney
  • 1 cup coconut chutney Store-bought or homemade

Method
 

Preparation Steps
  1. Boil potatoes in salted water for 15-20 minutes, drain, and mash until smooth.
  2. Blend coconut with cilantro to make chutney; add salt and chili for spice.
  3. Flatten a handful of mashed potato, add chutney and cheese, and form into balls.
  4. Roll balls in breadcrumbs, heat oil to 350°F (175°C), and fry for 4-5 minutes until golden.
  5. Serve hot with mint raita or mango chutney.
