Ingredients

  • Click to scale ingredients for more servings
  • 2 pounds boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 tablespoon ranch seasoning mix
  • 1 cup panko breadcrumbs for best texture or use regular if needed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • Cooking spray or olive oil for drizzling

Method

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large bowl, combine the buttermilk and ranch seasoning mix. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. In another bowl, mix together the breadcrumbs, garlic powder, onion powder, paprika, salt, black pepper, and Parmesan cheese.
  4. Remove the chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece in the breadcrumb mixture, pressing gently to adhere. Place the coated chicken on the prepared baking sheet.
  5. Lightly spray the tops of the chicken with cooking spray or drizzle with olive oil to help them crisp up.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F.
  7. Let the chicken rest for 5 minutes before serving.

  • For extra flavor, try adding a teaspoon of dried herbs like oregano or thyme to the breadcrumb mixture.
  • You can also substitute the buttermilk with plain yogurt for a thicker coating.
  • Serve with a side of fresh vegetables or a green salad for a complete meal.
  • If needed, use up to 1¼ cups breadcrumbs to ensure full coating.
