Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the imitation crab, refried beans, cottage cheese, and your Mexican blend cheese. Sprinkle in the Old Bay seasoning and stir until combined.
  3. Lay your tortillas flat and spoon a generous amount of the crab filling onto each. Roll them tightly, tucking in the sides.
  4. Place the rolled chimichangas seam-side down on a baking sheet lined with parchment paper.
  5. Lightly spray or brush the tops with oil and bake for about 20-25 minutes until golden brown.
  6. Check halfway through baking; if they are browning too quickly, cover loosely with foil.
  7. Let cool for a few minutes before serving warm with salsa or guacamole.
