- In a large bowl, combine ground beef, egg, breadcrumbs, salt, coarsely ground black pepper, and grated shallot. Mix gently until just combined.
- Divide the meat mixture into four equal portions and shape each into a round patty, about 1 inch thick.
- Heat a large skillet over medium-high heat, adding olive oil and butter. Sear the patties for about 5 minutes on each side.
- In the same skillet, reduce heat to medium. Add diced shallots and minced garlic, and sauté for about 1 minute.
- Stir in yellow mustard, additional salt, and pepper. Sprinkle in the flour, cooking for another minute while stirring constantly.
- Pour in the whiskey slowly, deglazing the skillet. Allow the mixture to simmer for about 3 minutes.
- Stir in beef broth and bring to a boil. Reduce heat and add in the cream, stirring until smooth.
- Return the seared hamburger steaks to the skillet, spooning the creamy sauce over each patty. Simmer for an additional 5 minutes.
- Remove from heat, sprinkle chopped chives over the top, and serve hot with creamy whiskey sauce.
