Equipment

  • skillet
  • Mixing Bowl

Method

Step‑by‑Step Instructions
  1. In a large bowl, combine ground beef, egg, breadcrumbs, salt, pepper, and grated shallots. Mix until just combined, then shape into four patties.
  2. Heat a large skillet over medium-high heat and add olive oil and butter. Sear the patties for 5 minutes on each side until golden brown, then set aside.
  3. In the same skillet, reduce heat to medium and add minced garlic and diced shallot. Sauté for 1 minute until fragrant.
  4. Stir in mustard, salt, pepper, and flour into the mixture and cook for 1-2 minutes. Then pour in whiskey, scraping any brown bits from the skillet.
  5. Add beef broth and bring to a gentle boil. Simmer for 2-3 minutes until thickened, then stir in cream.
  6. Return patties to the skillet, spoon some sauce over them, and simmer for an additional 5 minutes.
  7. Remove from heat, garnish with chopped chives, and serve immediately with buttery mashed potatoes or a green salad.
