Ingredients

  • 8 ounces Cavatappi Pasta or rotini/spiral pasta
  • 1 medium Red Bell Pepper finely chopped
  • 1 cup Celery finely chopped
  • 1 small Red Onion finely chopped
  • 1 medium Carrot shredded
For the Dressing
  • 1 cup Mayonnaise can replace part with Greek yogurt
  • 1/2 cup Sour Cream
  • 2 tablespoons White Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 teaspoon Sugar
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper

Method
 

Instructions
  1. Cook pasta in salted boiling water until al dente, about 8-10 minutes. Drain and cool under cold water.
  2. Whisk together mayonnaise, sour cream, vinegar, mustard, sugar, salt, and pepper in a bowl until smooth.
  3. Combine cooled pasta with a splash of vinegar or lemon juice to maintain freshness.
  4. Fold in two-thirds of the dressing with the pasta and let sit for 10-15 minutes.
  5. Add chopped vegetables to the pasta mixture and stir gently.
  6. Taste and adjust dressing, salt, and pepper as needed.
  7. Chill the salad for at least 2-4 hours.
  8. Give a gentle stir before serving and consider garnishing with paprika or fresh herbs.
